Late at night is when most people get the urge to snack on something, and making the wrong choices at this point in the day could be detrimental to your entire day of clean eating! What if I told you I had an amazing chocolate cake recipe that can be whipped up in less than 5 minutes, is packed with protein, and has minimal carbs? Well I do!
This recipe is one of my go to late night pre-bed snacks that I know I can eat guilt-free and will actually help me get to my goals rather than sabotage them. When snacking before bed it’s important to eat foods that are high in protein and good fats, especially if you did strength training that day. When you are asleep is when your muscles recover and rebuild, so to ensure you wake up a lean, mean, fat burning machine – feed your muscles with protein before bed. Good fats before bed are also great to help relax the body so you can sleep better as well as keep you full through until the morning.
Ok enough rambling, let’s get to the chocolate cake!!
Makes 1 Serving
1 scoop chocolate *casein or whey protein powder
1 tbsp unsweetened cocoa powder
1 tsp sweetener
1/4 tsp baking powder
1 egg white
2 tbsp milk (skimmed, unsweetened almond etc)
And a little water to thin down
(casein protein is a slower digesting protein so it great to have right before bed, but whey protein is fine also)
How It’s Done:
1: Mix all the dry ingredients in a mug with a fork until well blended and there are no clumps.
2: Add in the egg white and milk and mix until smooth.
3: Microwave for approximately 1 minute on high, but make sure you keep an eye on it. It might start to bubble over the top. If this happens, stop microwaving, press batter back into mug with fork, and continue microwaving.
5: When finished, the cake should be cooked but still very moist. It’s okay if not all the batter has cooked.6. If you want to add icing on top of the cake, I like to mix a little bit of PB2 (powdered peanut butter) with water and cinnamon to drizzle on top. Or you could add a tablespoon of your favorite nut butter on top too
Heat up the nut butter just a little bit and then drizzle it on top (thank me later it’s heaven!)
