Healthy Vegan Gluten-Free Chocolate Chip Cookie Bar Recipe

It’s  a fact that chocolate chip cookies are very hard to turn down, I’ll admit they are definitely my weakness!  Willpower has to be in full effect to turn down a warm, gooey, fresh out of the oven chocolate chip cookie right? What if I told you I have a healthier option for you to enjoy as a mid-day snack guilt-free?? Well I do! Check it out below and your welcome in advance :)




  • 3 Cups cooked chickpeas
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup agave or honey
  • 1 tablespoon vanilla extract
  • 1/2 cup of all natural nut or seed butter of your choice (peanut, almond, cashew etc…)
  • dark chocolate chips (sprinkle on top before putting in the oven)

How to Make Them:

  • Blend everything in a food processor
  • Place the cookie dough in a square pan coated with coconut oil
  • Sprinkle with dark chocolate chips, or fold it into the batter
  • Bake at 350f for 35 minutes and let it cool before cutting

Makes 16 servings


These cookies are great for an afternoon snack without the guilt, but remember still in moderation :)
