We all live very busy lives and sometimes adding variety to your healthy eating regimen can get more difficult – Enter slow cooker chicken! The slow cooker is a great way to allow your dinner to cook while you are out at work, running around with the kids, or taking a nap! Meal prep is made very simple with this recipe because it makes a large serving to last a week (if feeding one person). Eating healthy for one person or for a family doesn’t have to be boring, taste bland, or consist of the same meals on a weekly basis. Let’s get creative and even with the recipe below you can add spices or other flavoring to the chicken (be careful of hidden calories and sodium – read all about smart seasoning here)

Tip: This recipe is not limited to slow cooker chicken, try using lean turkey, beef, or whatever protein you choose!
Honey Sriracha Slow Cooker Chicken
5 chicken breasts, 4 oz. each
½ cup tamari (or coconut aminos or soy sauce)
½ cup honey
½ cup sriracha
2 tablespoons minced garlic
avocado to taste
How it’s made:
Place 5 chicken breasts on the bottom of a slow cooker, and then rub with 2 tablespoons of minced garlic.
Set crock-pot to high heat and cook for 2.5-3 hours, or until the chicken is fully cooked and easily shredded.
Drain liquid from cooked chicken and then, shred chicken with 2 forks.
Make sauce by mixing together tamari, honey, and sriracha, then pour on top of shredded chicken and mix.
Serve with brown rice and steamed broccoli or pop it in a whole wheat wrap!
