Pumpkin Coconut Protein Loaf – Guilt-Free!

Ok everyone brace yourselves!  If you love pumpkin as much as I do you are going to love this recipe!

I whipped this up this morning and had to put it out of sight to stop myself from eating the entire loaf!

Let’s get right down to business

Here is the recipe:

Ingredients:

  • 3/4 Cup Coconut Flour (You can also use whole wheat pastry flour if you want it more fluffly)
  • 1 1/2 Cup Canned Pumpkin (Just straight pumpkin – not pumpkin pie!)
  • 1 1/2 Scoops Vanilla Protein Powder photo-36
  • 1 1/2 Cup Liquid Egg Whites
  • 6 TBSP baking Stevia
  • 1 TBSP Cinnamon
  • 2 TBSP Pumpkin Pie Spice
  • 2 TBSP Baking Powder
  • 1 1/2 Vanilla Extract
  • Optional: I added a few dark chocolate chips & unsweetened shredded coconut on top

How To:

Mix the dry and wet ingredients separately

Then mix them together

Coat a 9x 5 dish with nonstick spray or coconut oil (I used coconut oil) and bake for 50 – 55 mins at 350 F
