Protein Sprinkle Muffins

Enter the Protein Sprinkle Muffin…sprinkles to keep the kids happy, loaded with protein to keep you and your husband happy and just enough sweetness to curb those sugar cravings!

Try these today for a quick and easy snack to keep you on track with your healthy eating goals.

 

Protein Sprinkle Muffins

Ingredients
2 eggs
2/3 c. unsweetened apple sauce
2 tbsp. brown sugar
1/3 c. skim milk (or milk substititute)
1 tsp. vanilla
1.5 c. Kodiak pancake mix (**big boxes sold at Costco)
1tsp baking powder
1/3 c. coloured sprinkles

Directions

Preheat oven to 350 and spray a regular 12 item muffin tin
Whisk eggs and brown sugar
Add in apple sauce, milk and vanilla
Mix in Kodiak mix, baking powder and sprinkles (setting aside 1 tbsp of sprinkles)
Pour batter into muffin tins
Add remaining sprinkles to muffins
Bake for 15 minutes
