Avocado Egg Salad Wrap – Healthy Snack or Lunch Idea!

I’m always happy to share some of my healthy regular “go-to’s” for quick, easy, and healthy meals.  If you are signed up for my Fit your ‘Fit – Summer Slim Down Challenge, this is a great way to switch up the tuna wrap that you will find in the meal plan.

This wrap can be made low carb by using lettuce wraps, but is also still healthy when thrown in a healthy whole wheat wrap.

INGREDIENTS:

1 Serving

  • 1 whole hard boiled egg
  • 1-2 hard boiled egg whites
  • 1/3-1/2 avocado
  • 1-2 tbsp non-fat greek yogurt
  • 1 tbsp yellow mustard
  • pepper to taste
  • lettuce wraps or small whole wheat wrap

Let’s Make the Wrap:

1. In a bowl, mash up all of the ingredients – including mustard and pepper.

2. Place the mixture inside the wrap, wrap it up, and enjoy!

Options: Add spinach, cucumber, red peppers or other vegetables to the wrap for more crunch.
